BROCCOLI PECORINO SOUP

This is a warm and peppery soup with a Mediterranean twist.

2 TBSP OLIVE OIL

1 GARLIC CLOVE, SLICED

½ CUP (125 ML) DICED ONIONS

1 LB (500 G) BROCCOLI FLORETS

3 CUPS (700 ML) LOW-SODIUM CHICKEN OR VEGETABLE STOCK

1 TSP KOSHER SALT

½ TSP GROUND BLACK PEPPER

1 ½ TBSP FLOUR

¼ CUP (60 ML) CREAM

1 CUP (250 ML) FINELY GRATED PECORINO ROMANO

SALT, TO TASTE

1 CUP (250 ML) PARMESAN CROUTONS (P. 104)

In a large pot on medium-low heat, warm olive oil. Stir in garlic and onions. Sauté until softened, about 5 minutes. Add broccoli florets, stock, salt, and pepper. Increase temperature to high and bring to a boil for 1 minute. Reduce heat, cover, and simmer for 15 minutes. Purée broccoli with an immersion blender until smooth.

In a small bowl, whisk flour and cream until completely smooth, then whisk mixture into soup. Whisk Pecorino Romano into soup ¼ cup (60 mL) at a time until melted. Taste and season with salt, if desired. Top with croutons.

Makes 4–6 servings.
